Taking all the personal preferences out of an answer to this question, I think that there is probably one really 'perfect' evening - and that is the evening when we've all found our staterooms, all started the unpacking, all worked out where and when we are going to have dinner - it's the very first night of the cruise; and there's that wonderful relief that you are safely onboard and all is well with the world.

Relaxing bath with a G&T then, when on Cunard, the early evening ballroom for a dance.
Dinner usually in the Grills but always second sitting when accompanying friends/ Facebook group.
Show time in the Theatre (if it appeals) (Don't do ventriloquists or illusionists: I meet enough on forums)
Back to Ballroom for more dancing till midnight and then head off to the night club.
PS. On those evenings when the ballroom is being used for various cocktail parties we either attend or would alternatively head for the Commodore Club.

Same start, bath and a G&T.
Head for pre-dinner drinks in one of the bars. (Horizon on Oceania, Crows Nest on most P&O and The Martini Bar on Celebrity Eclipse)
Linger over dinner - we enjoy our food, which is not to be rushed and will be washed down with a decent appropriate bottle of wine.
Enjoy a show and hopefully have a dance at one of the (generally) smaller venues.

Ideally ....
A large G&T lingered over from about six o'clock ( in the evening ) onwards while we get ready followed an hour and a half later by, and indeed with, a bottle of fine wine with one of our favourite on-board meals in a select dining venue rather than the MDR and this to be followed by a show ... assuming of course that we can actually stay awake long enough to see it all the way through

Dinner with good company, then a show, couple of hours in the casino, back to the cabin for two hours of passionate love making.... sounds just about the perfect evening for me

For me, smooth seas, a good dinner, a Queen/Mercury tribute, then a quiet drink in Tiffanys before a bedtime drink in Cafe Jardine (or the equivalent on whichever ship we may be on).

First sitting dinner with good table companions, show (if it sounds OK), then to anywhere where there is music and a not too full dance floor so that I can dance in my electric wheelchair. Won a bottle doing this once on Arcadia for being the best mover!!! I love to get onto the floor in my chair but I do have to make sure there aren't too many others there. I can spin my chair round on a sixpence!!!! Colin:- first sitting dinner then sleep in bed unless there is something particularly interesting in the theatre.

A perfect evening - going to any restaurant on board I fancy, not being restricted to a choice of one or two places, and just chilling out. Weather permitting maybe watching the sun go down in the Jacuzzi on our balcony - that's relaxing!
Alternatively, eating in, but either doing the Jacuzzi bit just before dinner, or staying in it for dinner!
